{"id":3141,"date":"2018-07-06T21:48:06","date_gmt":"2018-07-07T02:48:06","guid":{"rendered":"http:\/\/waltonspot.com\/lowsodium\/?page_id=3141"},"modified":"2018-07-06T21:48:06","modified_gmt":"2018-07-07T02:48:06","slug":"chicken-mushroom-curry","status":"publish","type":"page","link":"https:\/\/waltonspot.com\/lowsodium\/recipes\/poultry\/chicken-mushroom-curry\/","title":{"rendered":"Chicken Mushroom Curry"},"content":{"rendered":"<p>This recipe was adapted from <a href=\"http:\/\/www.familyfeedbag.com\/2013\/11\/chicken-mushroom-curry.html\" target=\"_blank\" rel=\"noopener\">http:\/\/www.familyfeedbag.com\/2013\/11\/chicken-mushroom-curry.html<\/a><\/p>\n<div class=\"easyrecipe\" data-rating=\"0\">\n<div class=\"item ERName\">Chicken Mushroom Curry<\/div>\n<div class=\"ERClear\"><\/div>\n<div class=\"ERIngredients\">\n<div class=\"ERIngredientsHeader\">Ingredients<\/div>\n<ul class=\"ingredients\">\n<li class=\"ingredient\">2 Tbsp olive oil<\/li>\n<li class=\"ingredient\">1-1\/2 lb boneless, skinless chicken thighs or breast<\/li>\n<li class=\"ingredient\">1 cup diced onion<\/li>\n<li class=\"ingredient\">2 garlic cloves, minced<\/li>\n<li class=\"ingredient\">2 tsp grated ginger root or canned ginger<\/li>\n<li class=\"ingredient\">1 cup sliced white mushrooms<\/li>\n<li class=\"ingredient\">1 tbsp garam masala<\/li>\n<li class=\"ingredient\">1 tsp fennel seed<\/li>\n<li class=\"ingredient\">1 tsp ground cumin<\/li>\n<li class=\"ingredient\">1 tsp ground coriander<\/li>\n<li class=\"ingredient\">1 tsp ground turmeric<\/li>\n<li class=\"ingredient\">1\/2 tsp ground cinnamon<\/li>\n<li class=\"ingredient\">1 can (13.5 fl oz) diced tomatoes<\/li>\n<li class=\"ingredient\">1\/2 cup water<\/li>\n<li class=\"ingredient\">2 tsp granulated white sugar<\/li>\n<li class=\"ingredient\">Optional: Garnish with chopped cilantro leaves<\/li>\n<\/ul>\n<\/div>\n<div class=\"ERInstructions\">\n<div class=\"ERInstructionsHeader\">Instructions<\/div>\n<div class=\"instructions\">\n<ol>\n<li class=\"instruction\">Warm the oil in a large pot over medium-high heat. Cut each chicken piece into chunks and add to the hot oil, cooking until browned on both sides (8-10 minutes for thighs, 5-6 minutes for breast. Transfer the chicken to a plate and set aside.<\/li>\n<li class=\"instruction\">In the pot, combine the onion, garlic and ginger and cook 2 to 3 minutes. Stir in the mushrooms, garam masala, fennel seed, cumin, coriander, turmeric, and cinnamon. Continue cooking a couple minutes, stirring frequently. Stir in the tomatoes, water and sugar.<\/li>\n<li class=\"instruction\">Return the chicken to the pot, along with any juices from the plate. Bring to a boil over high heat. Reduce heat to medium-low and simmer, covered, for 20 minutes, stirring occasionally.
