{"id":2912,"date":"2018-04-09T18:53:03","date_gmt":"2018-04-09T23:53:03","guid":{"rendered":"http:\/\/waltonspot.com\/lowsodium\/?page_id=2912"},"modified":"2018-04-09T18:56:16","modified_gmt":"2018-04-09T23:56:16","slug":"morningglorymuffins","status":"publish","type":"page","link":"https:\/\/waltonspot.com\/lowsodium\/recipes\/breads\/morningglorymuffins\/","title":{"rendered":"MorningGloryMuffins"},"content":{"rendered":"<p>Delicious, healthy low sodium muffins.<\/p>\n<div class=\"easyrecipe\" data-rating=\"0\">\n<div class=\"item ERName\">MorningGloryMuffins<\/div>\n<div class=\"ERClear\"><\/div>\n<div class=\"ERIngredients\">\n<div class=\"ERIngredientsHeader\">Ingredients<\/div>\n<ul class=\"ingredients\">\n<li class=\"ingredient\">1 cup all-purpose flour<\/li>\n<li class=\"ingredient\">1 cup whole wheat flour (I use white whole wheat)<\/li>\n<li class=\"ingredient\">\u00bd cup oat bran<\/li>\n<li class=\"ingredient\">3\/4 cup sugar<\/li>\n<li class=\"ingredient\">2 tsp baking soda<\/li>\n<li class=\"ingredient\">2 tsp cinnamon<\/li>\n<li class=\"ingredient\">1\/8 tsp salt<\/li>\n<li class=\"ingredient\">\u00bd cup canola oil<\/li>\n<li class=\"ingredient\">\u00be cup unsweetened applesauce<\/li>\n<li class=\"ingredient\">3 large eggs<\/li>\n<li class=\"ingredient\">1 tsp vanilla<\/li>\n<li class=\"ingredient\">2 cups (4 med) carrots, shredded<\/li>\n<li class=\"ingredient\">\u00bd cup raisins<\/li>\n<li class=\"ingredient\">\u00bd cup walnuts, chopped<\/li>\n<li class=\"ingredient\">\u00bd cup shredded coconut<\/li>\n<\/ul>\n<\/div>\n<div class=\"ERInstructions\">\n<div class=\"ERInstructionsHeader\">Instructions<\/div>\n<div class=\"instructions\">\n<ol>\n<li class=\"instruction\">Preheat the oven to 375 degrees. Line a muffin tin with paper cups or spray with non-stick spray (OR grease a non-stick 9-inch loaf pan.)<\/li>\n<li class=\"instruction\">In a large bowl, combine the dry ingredients: all-purpose flour, whole wheat flour, oat bran, sugar, baking soda, cinnamon and salt. Stir until everything is evenly combined.<\/li>\n<li class=\"instruction\">In another fairly large bowl, combine the wet ingredients: vegetable oil, applesauce, eggs and vanilla. Whisk until evenly combined. Stir in the carrots, raisins, walnuts and coconut.<\/li>\n<li class=\"instruction\">Pour the bowl of wet ingredients into the bowl of dry ingredients and stir just until everything is moistened and combined. (Don\u2019t over-stir)<\/li>\n<li class=\"instruction\">Fill the cups to the top with the muffin batter (OR, if you are using a loaf pan, pour the batter in the pan). Bake in the oven at 375 degrees for 30 minutes or until a toothpick inserted in the center comes out clean.
