(Such as sausage made with our <a title=\"No salt Italian Sausage\" href=\"http:\/\/waltonspot.com\/lowsodium\/recipes\/pork\/no-salt-italian-sausage\/\" target=\"_blank\">no-salt Italian Sausage<\/a> or our <a title=\"No Salt Breakfast Sausage\" href=\"http:\/\/waltonspot.com\/lowsodium\/recipes\/pork\/no-salt-breakfast-sausage\/\" target=\"_blank\">no-salt Breakfast Sausage<\/a> recipe)<\/p>\n<p>&nbsp;<\/p>\n<div class=\"easyrecipe\" data-rating=\"#rating#\">\n<div class=\"item ERName\">Spinach Mushroom Strata<\/div>\n<div class=\"ERClear\"><\/div>\n<div class=\"ERHead\">Serves: <span class=\"yield\">12<\/span><\/div>\n<div class=\"ERIngredients\">\n<div class=\"ERIngredientsHeader\">Ingredients<\/div>\n<ul class=\"ingredients\">\n<li class=\"ingredient\">1 Tbsp olive oil<\/li>\n<li class=\"ingredient\">1\/2 cup onions, finely chopped<\/li>\n<li class=\"ingredient\">1 cup mushrooms, sliced<\/li>\n<li class=\"ingredient\">10 oz frozen spinach, thawed and squeezed dry<\/li>\n<li class=\"ingredient\">1 cup no-salt Swiss cheese, shredded or grated.<\/li>\n<li class=\"ingredient\">6 large eggs (or 5 extra large eggs)<\/li>\n<li class=\"ingredient\">1 1\/2 cups nonfat milk<\/li>\n<li class=\"ingredient\">dash of black pepper<\/li>\n<li class=\"ingredient\">1\/8 tsp nutmeg<\/li>\n<li class=\"ingredient\">4 slices slightly stale (day-old) white or whole-wheat bread, cubed with crusts trimmed off<\/li>\n<li class=\"ingredient\">Optional: 1\/2 to 3\/4 lb. no-salt sausage, crumbled and well cooked. (see recipe)<\/li>\n<\/ul>\n<\/div>\n<div class=\"ERInstructions\">\n<div class=\"ERInstructionsHeader\">Instructions<\/div>\n<div class=\"instructions\">\n<ol>\n<li class=\"instruction\">pray a 9 X 13 inch baking dish with light coating of cooking spray.<\/li>\n<li class=\"instruction\">Heat the olive oil or butter in a frying pan over medium heat. Add the sliced mushrooms and onion saut\u00e9 for 4-6 minutes, or until the onions are tender. Add spinach. Cook and stir for 1 minute more. Drain any liquid off the cooked vegetables.<\/li>\n<li class=\"instruction\">Whisk the egg and milk together in a large bowl. Season with the pepper and nutmeg and mix until blended.<\/li>\n<li class=\"instruction\">Put the 1\/2 of the bread cubes in the casserole pan. Top with 1\/2 of the vegetables (and 1\/2 of optional cooked sausage). Then top with 1\/2 of the cheese. Repeat 1 more time.<\/li>\n<li class=\"instruction\">Pour the egg and milk mixture over the casserole.<\/li>\n<li class=\"instruction\">Cover with foil or plastic wrap and refrigerate overnight, or up to 24 hours.<\/li>\n<li class=\"instruction\">Preheat the oven to 350 degrees.<\/li>\n<li class=\"instruction\">Bake uncovered for 1 hour, or until risen, puffed and browned and it doesn\u2019t jiggle in the middle.
