{"id":1738,"date":"2014-10-29T20:16:55","date_gmt":"2014-10-30T01:16:55","guid":{"rendered":"http:\/\/waltonspot.com\/lowsodium\/?page_id=1738"},"modified":"2015-01-27T20:35:25","modified_gmt":"2015-01-28T01:35:25","slug":"easy-muffins","status":"publish","type":"page","link":"https:\/\/waltonspot.com\/lowsodium\/recipes\/breads\/easy-muffins\/","title":{"rendered":"Easy Muffins"},"content":{"rendered":"<p>These very easy, low sodium muffins are made using our <a title=\"Baking Mix\" href=\"http:\/\/waltonspot.com\/lowsodium\/recipes\/breads\/baking-mix\/\" target=\"_blank\">low-sodium baking mix.<\/a><\/p>\n<div class=\"easyrecipe\" data-rating=\"#rating#\">\n<div class=\"item ERName\">Easy Muffins<\/div>\n<div class=\"ERClear\"><\/div>\n<div class=\"ERHead\">Serves: <span class=\"yield\">12.<\/span><\/div>\n<div class=\"ERIngredients\">\n<div class=\"ERIngredientsHeader\">Ingredients<\/div>\n<ul class=\"ingredients\">\n<li class=\"ingredient\">2 cups low-sodium baking mix (see recipe) (Spooned lightly into the measuring cup without shaking or packing the cup.)<\/li>\n<li class=\"ingredient\">1\/4 tsp salt<\/li>\n<li class=\"ingredient\">1\/3 cup sugar<\/li>\n<li class=\"ingredient\">1 large egg<\/li>\n<li class=\"ingredient\">1 cup skim milk or buttermilk, cold. (To make buttermilk, mix 1 Tbsp white vinegar with enough skim milk to make 1 cup. Let it sit for 20 minutes before use.)<\/li>\n<li class=\"ingredient\">One or more of the following \u201cspecial ingredients\u201d: 1\/2 cup of berries, fruit, mashed or chopped bananas, 2 tsp of your favorite spice, 1 cup of nuts, or 1 tsp grated lemon or orange peel.<\/li>\n<\/ul>\n<\/div>\n<div class=\"ERInstructions\">\n<div class=\"ERInstructionsHeader\">Instructions<\/div>\n<div class=\"instructions\">\n<ol>\n<li class=\"instruction\">Preheat oven to 450\u00b0F. Grease a muffin tin or line it with muffin papers.<\/li>\n<li class=\"instruction\">Whisk the sugar, salt, and baking mix in a mixing bowl until well blended. Add one or more of the \u201cspecial ingredients.\u201d<\/li>\n<li class=\"instruction\">Beat the egg with the milk. Add the wet ingredients to the dry ingredients.<\/li>\n<li class=\"instruction\">Using a fork, gently blend for 15-20 seconds, until all of the flour is just moist. (The batter will be lumpy. This is a good thing.)<\/li>\n<li class=\"instruction\">Fill the muffin tin cups 1\/2 to 2\/3 cups full.
