{"id":1218,"date":"2014-03-09T00:43:21","date_gmt":"2014-03-09T05:43:21","guid":{"rendered":"http:\/\/waltonspot.com\/lowsodium\/?page_id=1218"},"modified":"2015-04-13T17:53:07","modified_gmt":"2015-04-13T22:53:07","slug":"basic-tomato-sauce","status":"publish","type":"page","link":"https:\/\/waltonspot.com\/lowsodium\/recipes\/vegetable-recipes\/basic-tomato-sauce\/","title":{"rendered":"Basic Tomato Sauce"},"content":{"rendered":"<p>This is an easy, low-sodium recipe for tomato sauce for casseroles, pasta, etc. that contains extra vegetables.<\/p>\n<div class=\"easyrecipe\" data-rating=\"0\">\n<div class=\"item ERName\">Basic Tomato Sauce<\/div>\n<div class=\"ERClear\"><\/div>\n<div class=\"ERHead\">Serves: <span class=\"yield\">10.<\/span><\/div>\n<div class=\"ERIngredients\">\n<div class=\"ERIngredientsHeader\">Ingredients<\/div>\n<ul class=\"ingredients\">\n<li class=\"ingredient\">Ingredients:<\/li>\n<li class=\"ingredient\">4 Tbsp olive oil<\/li>\n<li class=\"ingredient\">1 medium onion, finely chopped<\/li>\n<li class=\"ingredient\">2 carrots, finely chopped<\/li>\n<li class=\"ingredient\">2 small celery stalks, finely chopped<\/li>\n<li class=\"ingredient\">Optional: up to 1 cup of chopped zucchini and\/or mushrooms<\/li>\n<li class=\"ingredient\">4 Tbsp chopped fresh parsley (or 2 Tbsp dried parsley)<\/li>\n<li class=\"ingredient\">2 cloves garlic, minced<\/li>\n<li class=\"ingredient\">1 Tbsp sugar<\/li>\n<li class=\"ingredient\">1 Tbsp Italian Seasoning<\/li>\n<li class=\"ingredient\">1 tsp dried basil, OR 4 Tbsp chopped fresh basil<\/li>\n<li class=\"ingredient\">2 28-oz cans no-salt-added whole tomatoes, including the juice (or 3 \u00bd lb fresh tomatoes, peeled, seeded, and chopped)<\/li>\n<li class=\"ingredient\">2 tsp tomato paste<\/li>\n<li class=\"ingredient\">black pepper to taste.<\/li>\n<\/ul>\n<\/div>\n<div class=\"ERInstructions\">\n<div class=\"ERInstructionsHeader\">Instructions<\/div>\n<div class=\"instructions\">\n<ol>\n<li class=\"instruction\">Heat olive oil in a large wide skillet on medium heat. Add the chopped onion, carrot, celery, optional zucchini and\/or mushrooms, and parsley. Stir to coat. Reduce the heat to low, cover the skillet and cook for 15 to 20 minutes, stirring occasionally until the vegetables are softened and cooked through.<\/li>\n<li class=\"instruction\">Remove cover and add the minced garlic. Increase the heat to medium high. Cook for 30 seconds.<\/li>\n<li class=\"instruction\">Add the tomatoes, including the juice and shredding them if you are using canned whole tomatoes. Add the tomato paste, basil, sugar, and Italian Seasoning. Bring to a low simmer. Add a dash of black pepper (or more, according to your taste.)
