{"id":1110,"date":"2014-03-08T00:55:12","date_gmt":"2014-03-08T05:55:12","guid":{"rendered":"http:\/\/waltonspot.com\/lowsodium\/?page_id=1110"},"modified":"2014-05-08T21:05:36","modified_gmt":"2014-05-09T02:05:36","slug":"cook-choice-casserole","status":"publish","type":"page","link":"https:\/\/waltonspot.com\/lowsodium\/recipes\/vegetable-recipes\/cook-choice-casserole\/","title":{"rendered":"Cook&#8217;s Choice Casserole"},"content":{"rendered":"<p>Basically any casserole consists of:<\/p>\n<ul>\n<li>a starch (pasta in this recipe)<\/li>\n<li>vegetables<\/li>\n<li>meat or other protein, or additional vegetables<\/li>\n<li>and a sauce.<\/li>\n<\/ul>\n<p>This recipe explains how to use your favorite ingredients (or the ingredients you have available) to make a low-sodium casserole.<\/p>\n<p>This recipe uses the Low-Sodium <a title=\"Condensed Cream of xxx Soup Mix\" href=\"http:\/\/waltonspot.com\/lowsodium\/recipes\/sauces\/condensed-cream-of-xxx-soup-mix\/\" target=\"_blank\">Condensed Cream of XXX Soup<\/a> as one of its sauce options.<\/p>\n<div class=\"easyrecipe\">\n<div class=\"item ERName\">Cook&#8217;s Choice Casserole<\/div>\n<div class=\"ERClear\"><\/div>\n<div class=\"ERHead\">Serves: <span class=\"yield\">8.<\/span><\/div>\n<div class=\"ERIngredients\">\n<div class=\"ERIngredientsHeader\">Ingredients<\/div>\n<ul class=\"ingredients\">\n<li class=\"ERSeparator\">Starch:<\/li>\n<li class=\"ingredient\">8 oz bite-sized pasta (macaroni, rigatoni, or ziti, or spaghetti broken in half)<\/li>\n<li class=\"ERSeparator\">Oils and Seasoning:<\/li>\n<li class=\"ingredient\">1\/2 Tbsp unsalted butter OR vegetable oil<\/li>\n<li class=\"ingredient\">1\/2 Tbsp olive oil<\/li>\n<li class=\"ingredient\">1 tsp seasoning of your choice (For example, Mrs Dash Original Blend or Mrs Dash Garlic Herb)<\/li>\n<li class=\"ingredient\">(optional) 1 clove garlic, minced<\/li>\n<li class=\"ERSeparator\">Veggies:<\/li>\n<li class=\"ingredient\">1 1\/2 cups chopped fresh or frozen vegetables (for example: onions, celery, mushrooms, broccoli, spinach, and\/or squash)<\/li>\n<li class=\"ERSeparator\">Protein or additional veggies:<\/li>\n<li class=\"ingredient\">1-1\/2 cup cooked meat (chicken, turkey, or beef), cubed or shredded OR additional chopped vegetables if you are making an all-veggie casserole<\/li>\n<li class=\"ERSeparator\">Sauce:<\/li>\n<li class=\"ingredient\">For a cream sauce, use 1\/3 cup cream of xxx soup mix and 1- 1\/4 cup chicken or vegetable broth<\/li>\n<li class=\"ingredient\">Or, use 1-1\/2 cup basic tomato sauce. (see recipe under sauces)<\/li>\n<li class=\"ingredient\">Or, use 1-1\/2 cup Alfredo sauce (see recipe under sauces)<\/li>\n<li class=\"ERSeparator\">Optional ingredients:<\/li>\n<li class=\"ingredient\">(optional) 1\/4 cup crunchy topping (For example: breadcrumbs, panko, or toasted almonds)<\/li>\n<li class=\"ingredient\">(optional) 1\/8 to 1\/4 cup shredded cheese, if desired (cheddar, parmesan, Romano, or Parmesan)<\/li>\n<\/ul>\n<\/div>\n<div class=\"ERInstructions\">\n<div class=\"ERInstructionsHeader\">Instructions<\/div>\n<div class=\"instructions\">\n<ol>\n<li class=\"instruction\">Cook pasta according to package directions (omit the salt) for al-dente, but stop cooking a minute early.<\/li>\n<li class=\"instruction\">Heat a large skillet or pan to medium high. Then add the butter and oil. When the butter has melted, add chopped vegetables. Saut\u00e9 6-10 minutes, until vegetables are almost at desired doneness.<\/li>\n<li class=\"instruction\">Lightly spray a casserole dish with oil. Mix vegetables, meat, sauce, and pasta. Then put entire mixture in a casserole dish.<\/li>\n<li class=\"instruction\">If desired, you can cover casserole with foil and either refrigerate it up to 24 hours before baking or freeze it for 2-3 weeks.<\/li>\n<li class=\"instruction\">If casserole is frozen, thaw it in the refrigerator for 24 hours before baking.<\/li>\n<li class=\"instruction\">Preheat oven to 375 degrees.<\/li>\n<li class=\"instruction\">Sprinkle the casserole with (optional) crunchy topping and (optional) cheese just before baking. Bake uncovered 30-40 minutes until heated through and the top begins to brown. (If casserole was refrigerated prior to baking, bake it 40-45 minutes.
