This low-sodium casserole is a great way to use left-over chicken or turkey. The casserole works well whether you eat it immediately, or refrigerate or freeze it to eat later.
- 2 Tbsp butter
- 2 Tbsp all-purpose flour
- ⅛ tsp dried minced onion
- ⅛ tsp Mrs Dash Original Seasoning blend
- 1 ¾ cups skim milk
- 1 ¼ cup no-salt-added Swiss cheese, shredded, divided (Publix has Boars Head unsalted Swiss cheese)
- ¼ cup Parmesan cheese, grated, divided.
- 8 oz spaghetti (or other pasta if desired), broken into short pieces, cooked, and drained
- 2 cups cooked chicken or turkey, cubed
- 4 -6 oz mushrooms, sliced
- ¼ cup red bell pepper, chopped
- Heat oven to 350.
- Melt butter in a large saucepan on low heat. Stir in flour. Cook for 2 minutes, stirring constantly.
- Gradually add milk, stirring until well blended. Stir in dried minced onion and Mrs Dash Original Seasoning. Cook until thickened, stirring constantly.
- Stir in ¾ cup of the Swiss cheese and ⅛ cup of the Parmesan cheese. Stir until the cheese is melted.
- Add spaghetti, chicken/turkey, mushrooms, and bell pepper. Mix lightly.
- Bake 20 minutes in a 2 quart baking dish.
- Top with remaining Swiss cheese (½ cup) and Parmesan Cheese (1/8 cup). Continue baking until cheese is melted.
Our estimates assume the use of fresh chicken with only 3% sodium per serving (instead of chicken that has been infused with a high-sodium broth) and no-salt-added Swiss cheese instead of regular Swiss cheese. (Note: we used Boars Head no-salt-added Swiss cheese. It is available at many grocery stores and delis.)
Note that sodium percentages depend on which daily reference you use. The estimated 132 mg of sodium per serving implies that one serving of this recipe provides:
– 5% of the U.S. FDA daily reference value for sodium for a 2,000-calorie diet that includes 2,400 mg sodium, or
– 9% of the American Heart Association recommendation of 1,500 mg sodium per day, or
