Chicken Gumbo Soup

Chicken Gumbo Soup
Serves: 12.
 
Ingredients
  • 2 celery stalks, diced
  • 1 onion, diced
  • 4 cups of chicken broth
  • 1 can (16 ounce) no-salt-added tomatoes, undrained
  • ⅓ cup green peppers, diced
  • ⅓ cup rice, uncooked
  • 1 clove minced garlic (1/4 tsp dried minced garlic)
  • 1 cup of frozen okra
  • 2 tablespoons dry parsley
  • 1 tsp low-sodium Worcestershire sauce
  • ⅛ tsp hot sauce
  • ½ tsp Mrs Dash Chicken grilling seasoning
  • ½ cup cooked chicken, finely chopped
Instructions
  1. In a large soup pot, add all ingredients. Bring to a boil. Reduce heat and simmer until all vegetables and rice are tender, about 25 minutes. Add chicken and boil for another minute. Let soup sit for 30 minutes or more.
