This is an easy, fast recipe for using roast beef or roast pork leftovers.
- 1-1/2 cups cold cooked roast beef or pork
- 1 Tsp vegetable oil
- 1 large onion, sliced lengthwise
- 1 green pepper, chopped
- 1 clove garlic, minced
- 1 tbsp cornstarch
- 1 cup water
- 1 Tbsp vinegar
- 2 Tbsp brown sugar
- 2 Tbsp low-sodium soy sauce substitute OR 1 Tbsp low-sodium Worcestershire plus ¼ tsp water
- 1 tsp Mrs Dash Beef Grilling Seasoning
- Make a marinade by combining garlic, cornstarch, water, vinegar, brown sugar, and soy sauce or Worcestershire in a medium bowl and mix well.
- Add beef, and stir until the meat is well coated with the marinade. Then refrigerate for 20 minutes or so.
- Heat a non-stick frying pan to medium high. Add vegetable oil, garlic, pepper, and onions and saute for 2 minutes.
- Add the beef and marinade to the skillet . Bring to a simmer and cook 10 minutes, stirring frequently while the marinade thickens.
- Serve with rice.
