Slow Cooker Chili (Beef & Beans)
Serves: 8.
Ingredients
- 1 Tbsp. olive oil
- 1 onion, chopped
- ½ cup green pepper, chopped
- 1 tsp. garlic, minced
- 1 ½ Tbsp. chili powder
- ½ Tbsp. cumin
- ⅛ tsp. black pepper
- 1½ lb beef stew meat, cubed
- 2 can no-salt-added tomatoes
- 2 cups no-sodium black beans, cooked and drained
- ¼ cup water
Instructions
- Heat oil in a large skillet.
- Add onions and garlic and saute 4-5 minutes, until onions are softened.
- Add spices and beef. Cook and stir 6-8 minutes, until beef is browned on all sides.
- Place beef mixture in slow cooker. Stir in tomatoes, beans, and water.
- Cover and cook on low 8 to 10 hours.
