Marinated grilled vegetables

Very easy flavorful marinated grilled vegetables from a no-salt-added recipe.

The recipe uses our no-salt soy sauce subsitute. See recipe.

Marinated grilled vegetables
 
Ingredients
  • 3-4 cups thickly sliced fresh vegetables (example: zucchini, bell pepper, yellow squash, onion, mushrooms, cherry tomatoes, cauliflower, broccoli)
  • ½ cup olive oil
  • ½ cup no-salt soy sauce substitute (see recipe)
  • ½ cup lemon juice
  • ½ clove garlic, crushed
Instructions
  1. Place the washed, sliced vegetables in a large bowl.
  2. In a small bowl, mix together the olive oil, soy sauce, lemon juice, and garlic. Pour over the vegetables. Cover the bowl, and marinate in the refrigerator for 30 minutes.
  3. Preheat grill or large non-stick skillet on medium heat.
  4. Lightly oil grate or skillet. Remove vegetables from marinade, and place on preheated grill or skillet. Cook for 12 to 15 minutes, or until tender

This recipe has no added salt. Thus the only sodium is the very small amount contained naturally in the fresh vegetables.
