Slow Cooker Chili (Beef & Beans)
Serves: 8.
 
Ingredients
  • 1 Tbsp. olive oil
  • 1 onion, chopped
  • ½ cup green pepper, chopped
  • 1 tsp. garlic, minced
  • 1 ½ Tbsp. chili powder
  • ½ Tbsp. cumin
  • ⅛ tsp. black pepper
  • 1½ lb beef stew meat, cubed
  • 2 can no-salt-added tomatoes
  • 2 cups no-sodium black beans, cooked and drained
  • ¼ cup water
Instructions
  1. Heat oil in a large skillet.
  2. Add onions and garlic and saute 4-5 minutes, until onions are softened.
  3. Add spices and beef. Cook and stir 6-8 minutes, until beef is browned on all sides.
  4. Place beef mixture in slow cooker. Stir in tomatoes, beans, and water.
  5. Cover and cook on low 8 to 10 hours.
