Pumpkin Spice Bread

Ingredients
  • ⅔ cup shortening
  • 2 cups sugar
  • 4 large eggs (or 3 extra-large eggs)
  • 1 can (15-to-16 oz) pumpkin
  • ⅔ cup water
  • 3⅓ cups all-purpose flour, sifted
  • 2 tsp baking soda
  • ¾ tsp low-sodium baking powder
  • 1 tsp ground cinnamon
  • 1 tsp ground cloves
  • ⅔ cup coarsely chopped nuts
  • ⅔ cup raisins
Instructions
  1. Pre-heat oven to 350 degrees. Grease 2 x 5 x 3-inch loaf pans or three 8½ x 4½ x 2½ inch loaf pans.
  2. Sift together flour, baking soda, baking powder, cinnamon, and cloves. Then sift it again to make sure the ingredients are well mixed.
  3. In a large bowl, cream shortening and sugar until well mixed and fluffy.
  4. Stir in eggs, pumpkin, and water. Mix well.
  5. Stir in the sifted dry ingredients until well blended.
  6. Stir in nuts and raisins.
  7. Pour into loaf pans. Bake about 70 minutes or until wooden pick inserted in center comes out clean. (To make sure you don't overcook the bread, check after 60 minutes, then check each 5 minutes until the bread is done.)
  8. You can serve the bread warm or after it cools. Or, you can wrap in aluminum foil after it cools and then freeze it to serve later.
