Chicken or Turkey Tetrazzini
- 2 Tbsp butter
- 2 Tbsp all-purpose flour
- ⅛ tsp dried minced onion
- ⅛ tsp Mrs Dash Original Seasoning blend
- 1 ¾ cups skim milk
- 1 ¼ cup no-salt-added Swiss cheese, shredded, divided (Publix has Boars Head unsalted Swiss cheese)
- ¼ cup Parmesan cheese, grated, divided.
- 8 oz spaghetti (or other pasta if desired), broken into short pieces, cooked, and drained
- 2 cups cooked chicken or turkey, cubed
- 4 -6 oz mushrooms, sliced
- ¼ cup red bell pepper, chopped
- Heat oven to 350.
- Melt butter in a large saucepan on low heat. Stir in flour. Cook for 2 minutes, stirring constantly.
- Gradually add milk, stirring until well blended. Stir in dried minced onion and Mrs Dash Original Seasoning. Cook until thickened, stirring constantly.
- Stir in ¾ cup of the Swiss cheese and ⅛ cup of the Parmesan cheese. Stir until the cheese is melted.
- Add spaghetti, chicken/turkey, mushrooms, and bell pepper. Mix lightly.
- Bake 20 minutes in a 2 quart baking dish.
- Top with remaining Swiss cheese (½ cup) and Parmesan Cheese (1/8 cup). Continue baking until cheese is melted.
