Chicken or Turkey Tetrazzini

Ingredients
  • 2 Tbsp butter
  • 2 Tbsp all-purpose flour
  • ⅛ tsp dried minced onion
  • ⅛ tsp Mrs Dash Original Seasoning blend
  • 1 ¾ cups skim milk
  • 1 ¼ cup no-salt-added Swiss cheese, shredded, divided (Publix has Boars Head unsalted Swiss cheese)
  • ¼ cup Parmesan cheese, grated, divided.
  • 8 oz spaghetti (or other pasta if desired), broken into short pieces, cooked, and drained
  • 2 cups cooked chicken or turkey, cubed
  • 4 -6 oz mushrooms, sliced
  • ¼ cup red bell pepper, chopped
Instructions
  1. Heat oven to 350.
  2. Melt butter in a large saucepan on low heat. Stir in flour. Cook for 2 minutes, stirring constantly.
  3. Gradually add milk, stirring until well blended. Stir in dried minced onion and Mrs Dash Original Seasoning. Cook until thickened, stirring constantly.
  4. Stir in ¾ cup of the Swiss cheese and ⅛ cup of the Parmesan cheese. Stir until the cheese is melted.
  5. Add spaghetti, chicken/turkey, mushrooms, and bell pepper. Mix lightly.
  6. Bake 20 minutes in a 2 quart baking dish.
  7. Top with remaining Swiss cheese (½ cup) and Parmesan Cheese (1/8 cup). Continue baking until cheese is melted.
