Savory Meatloaf with Ketchup Topping
- 1½ lbs very lean ground beef
- 1 cup of no-salt-added ketchup
- 1 medium onion, chopped (about ½ cup)
- ¼ cup green bell pepper, finely chopped
- ½ cup diced celery
- ⅓ cup 1-minute oatmeal
- 1 large egg
- ½ tsp Mrs Dash Steak Grilling seasoning
- ½ tsp low-sodium Worcestershire sauce
- ⅛ tsp black pepper.
- 1 Tbsp parsley flakes
- ¼ tsp garlic powder
- ½ tsp ground black pepper
- Preheat oven to 350 degrees. Lightly spray loaf pan with cooking oil.
- Heat the olive oil in a small skillet until medium-high. Saute onion (and optional green pepper, optional celery) until onion is translucent (3-4 minutes). Remove from heat
- In a large bowl, beat egg. Add oatmeal and all of the seasonings. Mix well. Add ground beef, ½ cup ketchup and vegetables and stir until well mixed.
- Shape into a loaf and place in the loaf pan. Spread remaining ½ cup ketchup over loaf. Bake 350 degrees for 1¼ hours.
