Savory Meatloaf with Ketchup Topping

Ingredients
  • 1½ lbs very lean ground beef
  • 1 cup of no-salt-added ketchup
  • 1 medium onion, chopped (about ½ cup)
  • ¼ cup green bell pepper, finely chopped
  • ½ cup diced celery
  • ⅓ cup 1-minute oatmeal
  • 1 large egg
  • ½ tsp Mrs Dash Steak Grilling seasoning
  • ½ tsp low-sodium Worcestershire sauce
  • ⅛ tsp black pepper.
  • 1 Tbsp parsley flakes
  • ¼ tsp garlic powder
  • ½ tsp ground black pepper
Instructions
  1. Preheat oven to 350 degrees. Lightly spray loaf pan with cooking oil.
  2. Heat the olive oil in a small skillet until medium-high. Saute onion (and optional green pepper, optional celery) until onion is translucent (3-4 minutes). Remove from heat
  3. In a large bowl, beat egg. Add oatmeal and all of the seasonings. Mix well. Add ground beef, ½ cup ketchup and vegetables and stir until well mixed.
  4. Shape into a loaf and place in the loaf pan. Spread remaining ½ cup ketchup over loaf. Bake 350 degrees for 1¼ hours.
