Low Sodium Fish with Ginger Sauce
Serves: 4
 
Ingredients
  • 1 lb swordfish or cod filets, thawed, rinsed, and well drained
  • 3 tsp vegetable oil or sesame seed oil, divided
  • 2 Tbsp garlic, minced
  • 2 Tbsp fresh ginger, minced, graded,OR canned ground ginger
  • 2 Tbsp no-sodium soy sauce substitute (see recipe)
  • 2 Tbsp sherry or dry white wine (Do not use cooking win; it has salt added to the wine)
Instructions
  1. In a small bowl, stir together the garlic, ginger, no-sodium soy sauce substitute, sherry or wine, and 1 teaspoon of the oil. Set aside.
  2. Preheat to medium high a skillet large enough to hold all of the fish filets without overlapping
  3. Add the oil and swirl to coat the skillet bottom
  4. Add the fish filets. Cook on medium high for 3 minutes without turning.
  5. Reduce heat to medium. Turn the fish filets and pour the sauce over them. Cook uncovered 2-5 minutes on medium heat until fish is opaque and separates easily with a fork. (exact time will depend on the thickness of the filets.)
  6. Spoon the sauce over the fish when serving.
