Roast Lamb with Rosemary and Garlic
Serves: 12 slices
 
Ingredients
  • 3 lbs boneless rolled leg of lamb (can also roast it bone-in), with fat trimmed off, wrapped with string.
  • 1 tsp dried rosemary OR 1 Tbsp fresh rosemary
  • 3 cloves garlic, minced
Instructions
  1. Preheat oven to 450 degrees.
  2. Mix rosemary and minced garlic together. Then rub the mixture over the entire surface of the roast. Place roast on the rack of a broiler pan or roaster. Insert a meat thermometer into the thickest portion of the roast. Bake at 450 degrees for 1 hour and 15 minutes, or until thermometer registers 140 degrees (for medium-rare) to 155 degrees (for medium).
  3. Remove from oven and cover loosely with foil. Let stand 10 minutes before slicing. (The temperature of the roast will increase 5 degrees while standing.)
