No-salt Chorizo
Serves: 5
 
Ingredients
  • 1½ lb ground pork, turkey, or beef
  • 2 Tbsp Paprika
  • 1 Tbsp cumin
  • 1 Tbsp garlic powder
  • 1 tsp ground coriander
  • ½ tsp cloves
  • ½ tsp oregano
  • ½ tsp thyme
  • ½ tsp cayenne powder
  • ½ tsp ground black pepper
  • ¼ tsp ground cinnamon
  • 3 Tbsp apple cider vinegar
Instructions
  1. In a small bowl, mix the vinegar and ½ of the spice mixture.
  2. In a large bowl, spread the vinegar/spice mixture evenly on the pork and work it into the ground pork. Add the remaining spice mixture a little at a time, working it into the meat until all of the spices have been well mixed into the meat.
  3. Cover and place in the refrigerator overnight before cooking.
  4. To freeze: make into patties, separate each patty with plastic wrap or freezer paper, and freeze in a freezer bag.
  5. To cook: Form the sausage into thin patties or break into chunks. Cook in a medium-high skillet until cooked through with no pink remaining.
