No-salt Chorizo
- 1½ lb ground pork, turkey, or beef
- 2 Tbsp Paprika
- 1 Tbsp cumin
- 1 Tbsp garlic powder
- 1 tsp ground coriander
- ½ tsp cloves
- ½ tsp oregano
- ½ tsp thyme
- ½ tsp cayenne powder
- ½ tsp ground black pepper
- ¼ tsp ground cinnamon
- 3 Tbsp apple cider vinegar
- In a small bowl, mix the vinegar and ½ of the spice mixture.
- In a large bowl, spread the vinegar/spice mixture evenly on the pork and work it into the ground pork. Add the remaining spice mixture a little at a time, working it into the meat until all of the spices have been well mixed into the meat.
- Cover and place in the refrigerator overnight before cooking.
- To freeze: make into patties, separate each patty with plastic wrap or freezer paper, and freeze in a freezer bag.
- To cook: Form the sausage into thin patties or break into chunks. Cook in a medium-high skillet until cooked through with no pink remaining.
