Spicy Veggie 1-pot meal
- 1 Tbsp olive oil.
- ½ cup onion, finely chopped
- 1 clove garlic, minced
- ½ cup celery, finely chopped
- 2 bell peppers, cut into chunks
- ½ tsp Mrs Dash Original seasoning blend
- 1 tsp paprika
- ½ tsp ground cumin
- ½ tsp red chili flakes
- 2 cans diced no-salt-added tomatoes
- 2 15-oz cans no-salt beans (cannelloni, black beans, or navy beans), rinsed and drained
- 1 box (10 oz) frozen leaf spinach, thawed and drained
- Saute the onion in the oil on medium-high for 3 minutes. Add the garlic, celery, and pepper. Saute for 5 minutes more.
- Reduce the heat to medium and stir in the Mrs Dash, paprika, cumin, and chili flakes. Add the tomatoes and bring to a boil Reduce heat, cover and simmer gently for 30 minutes, stirring occasionally.
- Stir in the beans and spinach. Heat to boiling, stirring gently.
