Spicy Veggie 1-pot meal

Ingredients
  • 1 Tbsp olive oil.
  • ½ cup onion, finely chopped
  • 1 clove garlic, minced
  • ½ cup celery, finely chopped
  • 2 bell peppers, cut into chunks
  • ½ tsp Mrs Dash Original seasoning blend
  • 1 tsp paprika
  • ½ tsp ground cumin
  • ½ tsp red chili flakes
  • 2 cans diced no-salt-added tomatoes
  • 2 15-oz cans no-salt beans (cannelloni, black beans, or navy beans), rinsed and drained
  • 1 box (10 oz) frozen leaf spinach, thawed and drained
Instructions
  1. Saute the onion in the oil on medium-high for 3 minutes. Add the garlic, celery, and pepper. Saute for 5 minutes more.
  2. Reduce the heat to medium and stir in the Mrs Dash, paprika, cumin, and chili flakes. Add the tomatoes and bring to a boil Reduce heat, cover and simmer gently for 30 minutes, stirring occasionally.
  3. Stir in the beans and spinach. Heat to boiling, stirring gently.
