Spicy Sausage Veggie 1-Pot Meal

Ingredients
  • 1 Tbsp olive oil.
  • ½ cup onion, finely chopped
  • 1 clove garlic, minced
  • ½ cup celery, finely chopped
  • 2 bell peppers, cut into chunks
  • 1 lb no-salt spicy sausage (hot sausage, chorizo, or Italian), see recipe
  • ½ tsp Mrs Dash Original seasoning blend
  • 1 tsp paprika
  • ½ tsp ground cumin
  • ½ tsp red chili flakes
  • 2 cans diced no-salt-added tomatoes
  • 2 15-oz cans no-salt beans (cannelloni, black beans, or navy beans), rinsed and drained
  • 1 box (10 oz) frozen leaf spinach, thawed and drained
Instructions
  1. Saute the onion in the oil on medium-high for 3 minutes. Add the garlic, celery, and pepper. Saute for 5 minutes more.
  2. Break the sausage, breaking it into chunks, and cook until browned and cooked through. Reduce the heat to medium and stir in the Mrs Dash, paprika, cumin, and chili flakes. Add the tomatoes and bring to a boil Reduce heat, cover and simmer gently for 30 minutes, stirring occasionally.
  3. Stir in the beans and spinach. Heat to boiling, stirring gently.
