Chicken with Artichoke and Mushrooms

Ingredients
  • 1½ lb skinless, boneless chicken pieces cut into strips OR chicken fingers
  • ½ tsp Mrs Dash Chicken Seasoning blend
  • 1 Tbsp olive oil
  • 1 Tbsp unsalted butter
  • 1 can (12 oz) marinated, quartered artichoke hearts, drained with liquid reserved. (Note: check the sodium level for canned artichokes and get the brand with the lowest level of sodium)
  • 1 Tbsp onion, minced
  • 1 cup sliced fresh mushrooms
  • ½ cup white wine (don’t use cooking wine)
  • ½ cup no-salt chicken broth
Instructions
  1. Sprinkle chicken with Mrs Dash Chicken Seasoning blend
  2. Heat a large skillet to medium. Then add oil and butter. After butter melts, add chicken and cook 5 minutes per side, until both sides are brown. Remove chicken from skillet and set aside.
  3. Add artichoke hearts, onion, and mushrooms to the skillet. Sauce 3-4 minutes, until mushrooms are tender. Return chicken to the skillet. Add reserved artichoke liquid, white wine, and chicken broth.
  4. Simmer on low heat, stirring occasionally, until the chicken is cooked through and is very tender. (This will take 15-20 minutes for chicken tenders, and 30 - 40 minutes for chicken pieces with bones.)
