Chicken with Artichoke and Mushrooms
- 1½ lb skinless, boneless chicken pieces cut into strips OR chicken fingers
- ½ tsp Mrs Dash Chicken Seasoning blend
- 1 Tbsp olive oil
- 1 Tbsp unsalted butter
- 1 can (12 oz) marinated, quartered artichoke hearts, drained with liquid reserved. (Note: check the sodium level for canned artichokes and get the brand with the lowest level of sodium)
- 1 Tbsp onion, minced
- 1 cup sliced fresh mushrooms
- ½ cup white wine (don’t use cooking wine)
- ½ cup no-salt chicken broth
- Sprinkle chicken with Mrs Dash Chicken Seasoning blend
- Heat a large skillet to medium. Then add oil and butter. After butter melts, add chicken and cook 5 minutes per side, until both sides are brown. Remove chicken from skillet and set aside.
- Add artichoke hearts, onion, and mushrooms to the skillet. Sauce 3-4 minutes, until mushrooms are tender. Return chicken to the skillet. Add reserved artichoke liquid, white wine, and chicken broth.
- Simmer on low heat, stirring occasionally, until the chicken is cooked through and is very tender. (This will take 15-20 minutes for chicken tenders, and 30 - 40 minutes for chicken pieces with bones.)
