Fast Baked Oven Fries

Ingredients
  • Olive oil OR olive oil cooking spray
  • 1½ lbs potatoes, scrubbed
  • 1 tablespoon extra-virgin olive oil
  • 2 tsp dried rosemary, dill, oregano, paprika, or other seasoning of your choice
  • 1 ½ teaspoon Mrs Dash Original Seasoning blend
Instructions
  1. Preheat the oven to 425°F and spray a large baking sheet with olive oil cooking spray OR very lightly oil with olive oil.
  2. Place whole potatoes into a microwave-safe casserole dish. (do not poke any holes) Cover the dish and microwave on HIGH for 3 to 4 minutes, depending on the strength of the microwave. (The goal is to cook the potatoes until they are ½ to ¾ done.)
  3. Cut each potato into 8 wedges. Place the wedges in a large bowl and toss with olive oil. Spread the potato wedges in a single layer on a baking sheet. Bake in the preheated oven for 10 minutes.
  4. Spray with olive oil cooking spray, turn, and spray again.
  5. Bake for 10 minutes more, or until the fries are golden brown. Spray once more.
  6. Combine the rosemary and Mrs Dash Seasoning blend in a small bowl. Sprinkle over the cooked potatoes and toss well to coat.
