Tilapia Florentine
- Mrs Dash Garlic & Herb Seasoning
- 4 (4 oz each) tilapia fillets (or other firm white fish)
- 10 oz frozen spinach
- ½ cup onion, chopped.
- 1 Tbsp olive oil
- Rub olive oil over a microwave safe baking dish large enough for the fish filets to fit without overlapping
- Cook frozen spinach and onions, 1 tsp olive oil, and ¼ cup water in the microwave for 4 minutes.
- Rub tilapia with a very small amount of olive oil and place on top of the spinach. (The spinach should be arranged so it’s mostly covered with the tilapia.
- Sprinkle a small amount of Mrs Dash Garlic & Herb Seasoning evenly on top each fish filet
- Cover, place in the microwave, and cook on high for 2 minutes.
- Turn the fish. Use the remaining olive oil to drizzle a very small amount of olive oil on top of each filet. Then sprinkle with a small amount of Mrs. Dash Garlic & Herb Seasoning.
- Cover and cook for another 2 minutes, or until the fish is opaque all of the way through and it flakes easily when poked with a fork.
