Refried Beans
 
Ingredients
  • 1 Tbsp olive oil
  • ½ medium onion, diced
  • 2 cloves garlic, minced
  • Optional: 1 tsp chili powder
  • 1 (15-ounce) can no-salt pinto beans or black beans (OR 1½ cup pre-cooked beans), drained and rinsed
  • ⅔ cup no-salt vegetable broth (OR chicken broth if you don't need a vegetarian dish), plus more if needed to moisten the beans
  • Optional: ½ tsp lime juice
  • Optional: Mrs Dash Onion Herb Seasoning blend
  • 2 Tbsp chopped fresh cilantro leaves OR 2 tsp dried chopped cilantro
Instructions
  1. In a medium skillet, heat the oil. Then add the onion and cook until tender, about 3 minutes.
  2. Stir in the garlic, chili powder or taco seasoning, and Mrs Dash. Cook for 1 minute more.
  3. Stir in the beans, chicken broth and optional lime juice. If using dried cilantro, stir in cilantro now.
  4. Cook about 5 minutes until the beans are warmed through. Mash the beans coarsely with the back of a spoon, adding more broth to moisten, if needed. If using fresh cilantro, stir in the cilantro now.
  5. Stir in the lime juice. If needed warm the beans on low heat.
