Sweet Spicy Stir Fry
Serves: 4
 
Ingredients
  • 1 Tbsp vegetable oil
  • Optional: Lemon Pepper Seasoning blend OR Mrs Dash Chicken Grilling Seasoning blend
  • Optional: 1 lb meat thawed and patted dry: skinless boneless chicken cut into bite sided pieces, tilapia filets, OR 1 lb peeled and deveined raw shrimp
  • 2 cups raw vegetables of your choice, cut into bite-sided pieces (for example, a mixture of any of the following: celery, onions, carrots, broccoli florets, cauliflower florets, mushrooms)
  • 1 recipe of the no-sodium sweet and spicy stir fry sauce (see recipe)
Instructions
Make the sauce (see recipe) while you stir-fry the vegetables and optional meat.
Heat the oil to medium high in a large non-stick skillet or wok.
To cook the optional meat:
  1. If you are including chicken in your dish: sprinkle the chicken pieces Mr Dash Chicken Grilling Seasoning blend and then stir-fry it until cooked through with no pink inside. Transfer it to a plate and cover with aluminum foil to keep warm while you cook the vegetables.
  2. If you are including fish or shrimp in your dish, sprinkle it with Lemon Pepper seasoning and then fry it until opaque throughout, flipping halfway through. Transfer it to a plate, covering with aluminum foil to keep warm while you stir-fry the vegetables.
To cook the vegetables:
  1. Stir-fry until crisp tender.
To finish:
  1. Add the meat (if any) to the skillet. Pour the sauce over all, and gently stir to mix. Bring the sauce to a boil. Then turn off the heat and let it sit for 1 minute so the flavors can mix.
  2. Serve over rice or pasta.
