Zucchini Cheese Squares
Serves: 16.
 
Ingredients
  • 3 cups grated zucchini
  • 1 cup grated carrots (or, if desired, you can substitute another cup of grated zucchini for the carrots.)
  • 1¾ cups no-salt baking mix (see recipe)
  • ¾ cup grated Parmesan cheese
  • ½ cup shredded sharp Cheddar cheese
  • ½ cup shredded no-salt Swiss Cheese
  • 4 eggs, beaten
  • ½ cup vegetable oil
  • 1 large onion, finely chopped
  • 4 cloves chopped garlic
  • 3 tablespoons dried parsley
  • ¾ teaspoon dried oregano
Instructions
  1. Preheat the oven to 400 degrees. Generously grease a 9 x 13 inch baking pan or an 8 x 8 inch baking pan.
  2. Cook the grated carrots in the microwave on high with a small amount of water for 3 minutes. Drain.
  3. Combine all ingredients in a large mixing bowl. Spread the mixture into the greased 9x13 inch baking pan.
  4. Bake 25 to 30 minutes, until golden brown. (If you can use an 8 x 8 inch pan, bake for 40-50 minutes, until golden brown.)
  5. Allow the mixture to cool for 5 minutes or more. Cut into squares and serve.
