Fruit Cobbler
Serves: 8
 
Ingredients
  • 5 ripe fresh or frozen peaches (or 1 - 2 cups of other fruit), pitted and sliced
  • 1 cup sugar
  • 8 Tbsp (1 stick) unsalted butter, cut into tablespoons
  • 1 cup all-purpose flour
  • 2 tsp low sodium baking powder
  • ¼ tsp freshly grated nutmeg (for peaches) OR ¼ tsp cinnamon and ¼ tsp nutmeg for apples or pears)
  • 1 cup skim milk
Instructions
  1. Heat oven to 350 degrees. Combine sliced fruit and ¼ cup sugar in a medium bowl. Toss to coat fruit evenly with sugar. Set for 10 minutes.
  2. Meanwhile, place butter slices in bottom of casserole dish. Transfer to oven and bake butter is melted and bubbling.
  3. While the butter is melting: in a medium bowl, whisk together the remaining ¾ cup sugar, flour, baking powder, and nutmeg. Add milk slowly, whisking until completely combined.
  4. Spoon flour mixture into baking dish on top of melted butter.
  5. Pour fruit with juice over the flour mixture.
  6. Bake in pre-heated oven for 50-60 minutes, until fruit is bubbly and tender and the crust is golden brown.
