Fruit Cobbler
- 5 ripe fresh or frozen peaches (or 1 - 2 cups of other fruit), pitted and sliced
- 1 cup sugar
- 8 Tbsp (1 stick) unsalted butter, cut into tablespoons
- 1 cup all-purpose flour
- 2 tsp low sodium baking powder
- ¼ tsp freshly grated nutmeg (for peaches) OR ¼ tsp cinnamon and ¼ tsp nutmeg for apples or pears)
- 1 cup skim milk
- Heat oven to 350 degrees. Combine sliced fruit and ¼ cup sugar in a medium bowl. Toss to coat fruit evenly with sugar. Set for 10 minutes.
- Meanwhile, place butter slices in bottom of casserole dish. Transfer to oven and bake butter is melted and bubbling.
- While the butter is melting: in a medium bowl, whisk together the remaining ¾ cup sugar, flour, baking powder, and nutmeg. Add milk slowly, whisking until completely combined.
- Spoon flour mixture into baking dish on top of melted butter.
- Pour fruit with juice over the flour mixture.
- Bake in pre-heated oven for 50-60 minutes, until fruit is bubbly and tender and the crust is golden brown.
