Apple Butter Spice Bread
Serves: 12

Ingredients
  • ¾ cups whole wheat bread
  • ¾ cups all-purpose flour
  • ¾ tsp baking soda
  • ½ tsp low-sodium baking powder
  • ½ tsp ground nutmeg
  • ¼ tsp ground cloves
  • ⅓ cup unsalted butter, softened
  • ⅓ cup sugar
  • 1 egg
  • 1¼ cups apple butter
  • ½ cup raisins
  • ½ cup chopped walnuts or pecans, unsalted
Instructions
  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 8x4x2-inch loaf pan.
  2. Sift whole wheat flour, all-purpose flour, baking soda, baking powder, nutmeg, and cloves together and set aside.
  3. Beat the butter and sugar in a separate large bowl until smooth. Add the egg and apple butter; continue beating until smooth.
  4. Mix in the flour mixture, stirring gently only until the flour has been incorporated. (Small lumps are ok.)
  5. Fold in the raisins and walnuts; stirring gently just enough to evenly combine.
  6. Pour into prepared loaf pan. Bake in the preheated oven until a toothpick inserted into the center comes out clean, 40 to 50 minutes.
  7. Cool in the pans for 10 minutes. Then remove the loaf from the pan and cool completely on a wire rack.
