Crispy Date Nut Confection
- 1 stick unsalted butter
- 2 eggs, beaten
- 1 cup dates (dried, no pit, chopped)
- 1 cup white sugar
- 1 cup pecans
- 2½ cup Rice Krispies or similar cereal
- 6 oz sweetened flaked coconut
- In a large heavy saucepan, melt the butter
- Add the eggs, dates, sugar, and nuts. Bring to a boil and boil on medium heat for 4 minutes.
- Remove from heat and stir in the Rice Krispies
- Drop teaspoon-sized blobs on waxed paper.
- When cool, shape each blob into a ball and roll it in coconut.
