Baked Zuccini Bites
 
Ingredients
  • 2 medium zucchini, sliced ¼-inch thick
  • ½ cup plan panko
  • 1 tsp Italian seasoning
  • ¼ cup grated Parmesan cheese
  • ⅛ teaspoon black pepper
  • 2 eggs
Instructions
  1. Preheat oven to 475 degrees F.
  2. In a small bowl, combine panko, Italian seasoning, Parmesan cheese and pepper.
  3. In a separate bowl, whisk together eggs.
  4. Dip zucchini slices into the eggs then coat in the breadcrumb mixture.
  5. Place coated zucchini slices on a greased baking sheet. Bake for 5 minutes. Remove from the oven and turn over each slice. Then return to the oven for another 5-10 minutes, or until browned.
