Chicken Gumbo Soup
- 2 celery stalks, diced
- 1 onion, diced
- 4 cups of chicken broth
- 1 can (16 ounce) no-salt-added tomatoes, undrained
- ⅓ cup green peppers, diced
- ⅓ cup rice, uncooked
- 1 clove minced garlic (1/4 tsp dried minced garlic)
- 1 cup of frozen okra
- 2 tablespoons dry parsley
- 1 tsp low-sodium Worcestershire sauce
- ⅛ tsp hot sauce
- ½ tsp Mrs Dash Chicken grilling seasoning
- ½ cup cooked chicken, finely chopped
- In a large soup pot, add all ingredients. Bring to a boil. Reduce heat and simmer until all vegetables and rice are tender, about 25 minutes. Add chicken and boil for another minute. Let soup sit for 30 minutes or more.
