Roast Chicken with Orange Juice
- 2 Tbsp Mrs Dash Chicken Grilling
- 2 Tbsp Mrs Dash Garlic & Herb
- 5 lb roasting chicken
- ½ cup orange juice
- 2 medium onions, sliced crosswise ½ inch thickened
- 1 cup no sodium chicken broth
- Preheat oven to 350
- Remove giblets and excess fat from chicken
- Rinse chicken and dry it with paper towel
- Tuck the wing tips under the body.
- Sprinkle cavity with Mrs Dash Garlic & Herb
- Place your hand under skin on breast and gently lift the skin from breast
- Sprinkle breast meat with Mrs Dash Chicken Grilling and replace skinless
- Put onion slices on bottom of heavy duty roasting plan. Place chicken on top of onion slices, and pour orange juice over skin.
- Roast until skin is golden brown and crist and the juices run clear (about 1 ½ – 1 ¾ hours)
- Remove skin from over and transfer to cutting board
- Skim off fat from pan
- Add chicken broth and stir to remove any browned bits from bottom of pan
- Cook until liquid is reduced and thickened.
- Press Onion to extract any juices.
- Strain the sauce. Serve carved chicken with the sauce.
