These flavorful veggie cheese squares have a quiche-like consistency.
The recipe uses our no-sodium baking mix, without added salt.
- 3 cups grated zucchini
- 1 cup grated carrots (or, if desired, you can substitute another cup of grated zucchini for the carrots.)
- 1¾ cups no-salt baking mix (see recipe)
- ¾ cup grated Parmesan cheese
- ½ cup shredded sharp Cheddar cheese
- ½ cup shredded no-salt Swiss Cheese
- 4 eggs, beaten
- ½ cup vegetable oil
- 1 large onion, finely chopped
- 4 cloves chopped garlic
- 3 tablespoons dried parsley
- ¾ teaspoon dried oregano
- Preheat the oven to 400 degrees. Generously grease a 9 x 13 inch baking pan or an 8 x 8 inch baking pan.
- Cook the grated carrots in the microwave on high with a small amount of water for 3 minutes. Drain.
- Combine all ingredients in a large mixing bowl. Spread the mixture into the greased 9x13 inch baking pan.
- Bake 25 to 30 minutes, until golden brown. (If you can use an 8 x 8 inch pan, bake for 40-50 minutes, until golden brown.)
- Allow the mixture to cool for 5 minutes or more. Cut into squares and serve.
