Flavorful, very inexpensive vegetarian split pea soup with almost no sodium.
Split Pea Soup
Ingredients
- 1 medium onion, chopped
- 2 medium carrots, diced
- 2 medium stalks celery, diced
- 2 medium potatoes OR 1 large potato, diced
- 1 lb. dry green split peas, rinsed and checked (2¼ cups)
- 7 cup low-sodium vegetable broth (OR you can substitute chicken broth if you don’t need a vegetarian dish)
- 1 bay leaf
- 2 tsp Mrs Dash Original seasoning blend
- 1 tsp ground coriander
- ½ tsp ground cumin
Instructions
- Place all ingredients into a large slow cooker and stir to combine. Cover, set to high, and cook, stirring occasionally, 7 hours or until all vegetables are very soft.
