This hearty meatless dish can either be used as a main dish or a side dish.
Peas and Rice

Ingredients
- 1 tsp olive oil
- 1 cup onion, chopped
- ½ cup bell pepper, chopped
- 3 cloves garlic, minced
- 1½ cups pre-cooked (without salt) long-grained rice
- ⅛ tsp hot sauce (or more if you want the dish to be hot)
- ⅛ tsp Mrs Dash Garlic Herb Seasoning blend
- 1 can no sodium black-eyed peas OR 1½ cup cooked black-eyed peas or green peas cooked without salt)
Instructions
- Rinse and drain the peas.
- Heat the oil to medium-high in a large non-stick skillet or saucepan. Add onion, bell pepper, and garlic. Saute about 3 minutes.
- Stir in rice, hot sauce, and Mrs Dash Garlic Herb Seasoning. Stir-fry until the rice is thoroughly heated, stirring frequently.
- Stir in the peas. Cook, stirring gently, a minute or two until the beans are heated through.
