This is a very easy, savory dish.
- 1 Tbsp olive oil
- 1 lb boneless, skinless chicken breasts, thighs, or chicken fingers
- (optional) 4-6 oz mushrooms, sliced
- 3 Tbsp. Mrs. Dash Tomato Basil Garlic Seasoning blend, divided
- 4 oz. can no-salt-added tomato sauce
- 2 Tbsp water
- 2 Tbsp shredded Parmesan cheese
- Heat a large sauté pan to medium.
- Sauté onion and chicken in the olive oil for 6 minutes, turning after 3 minutes.
- Optional: place mushroom slices on top of the chicken.
- Combine tomato sauce with 2 Tbsp. of water and 2 Tbsp. Mrs. DashTomato Basil Seasoning.
- Add tomato mixture to chicken. Then sprinkle evenly with remaining Mrs. Dash Tomato Basil seasoning and Parmesan.
- Turn heat to simmer and cover. Cook until the chicken is thoroughly cooked, turning the chicken 2 or 3 times while it cooks, spooning the sauce over the chicken after turning.
- Remove from heat. Keep the pan covered and let it rest 2 minutes so the sauce can thicken.
- Serve, spooning sauce over chicken.
