This is an extremely easy low-sodium dish that uses left-over chicken. It works equally well with left-over turkey.
- ¼ cup sliced fresh mushrooms
- ¼ cup cooked chicken (or turkey) , shredded or sliced
- 1 thin slice no-salt Swiss Cheese.
- Place the mushroom slices in a single layer, with no space between the slices, on a microwave-safe plate. Top with chicken. Then top with cheese slice.
- Microwave on high for 2 minutes for one serving. (Increase cook time for additional servings.)
Use cooked chicken prepared using fresh chicken (or turkey) with only 3% sodium per serving (instead of chicken (or turkey) that has been infused with a high-sodium broth).
Note that sodium percentages depend on which daily reference you use. The estimated 84 mg of sodium per serving implies that one serving of this recipe provides:
– 3% of the U.S. FDA daily reference value for sodium for a 2,000-calorie diet that includes 2,400 mg sodium, or
– 5% of the American Heart Association recommendation of 1,500 mg sodium per day, or
