This no-salt savory Mexican-style chorizo sausage has so much flavor that we don’t miss the salt. It can be used in a variety of Mexican recipes or casseroles, or as a more flavorful breakfast sausage
- 1½ lb ground pork, turkey, or beef
- 2 Tbsp Paprika
- 1 Tbsp cumin
- 1 Tbsp garlic powder
- 1 tsp ground coriander
- ½ tsp cloves
- ½ tsp oregano
- ½ tsp thyme
- ½ tsp cayenne powder
- ½ tsp ground black pepper
- ¼ tsp ground cinnamon
- 3 Tbsp apple cider vinegar
- In a small bowl, mix the vinegar and ½ of the spice mixture.
- In a large bowl, spread the vinegar/spice mixture evenly on the pork and work it into the ground pork. Add the remaining spice mixture a little at a time, working it into the meat until all of the spices have been well mixed into the meat.
- Cover and place in the refrigerator overnight before cooking.
- To freeze: make into patties, separate each patty with plastic wrap or freezer paper, and freeze in a freezer bag.
- To cook: Form the sausage into thin patties or break into chunks. Cook in a medium-high skillet until cooked through with no pink remaining.
Note: before using this recipe, check the label on your ground meat to be sure that it doesn’t have any added sodium. The label of your ground meat should indicate that the sodium per serving is no more than 3%.
Note that sodium percentages depend on which daily reference you use. The estimated 60 mg of sodium per serving implies that one serving of this recipe provides:
– 3% of the U.S. FDA daily reference value for sodium for a 2,000-calorie diet that includes 2,400 mg sodium, or
