Slow Cooker Spicy Zesty Nuts

Easy and healthy no-sodium nut snack mix recipe. This is especially good when combined with dried fruit (we used dried cranberries and dried banana chips.)

Slow Cooker Spicy Zesty Nuts
Serves: 16
 
Ingredients
  • ¼ cup pure maple syrup
  • 3 Tbsp unsalted butter, melted
  • 2 tsp ground cinnamon
  • 2 tsp finely grated dried orange zest (OR dried lemon zest)
  • ½ tsp Mrs Dash Original Seasoning blend
  • ⅛ tsp cayenne pepper
  • 2 cups raw pecans
  • 2 cups unsalted roasted or raw cashews
Instructions
  1. If using raw cashews, you will need to roast them first: Preheat the oven to 350degrees. Spread the raw cashews in a single layer on a baking dish. Bake 10 minutes in the pre-heated oven, stirring twice (every 3 minutes or so).
  2. Line a slow cooker with heavy duty aluminum foil. Lightly oil the foil or spray with cooking spray.
  3. Whisk together the maple syrup, butter, cinnamon, orange zest, Mrs Dash Original, and cayenne in a large bowl. Add the pecans and roasted cashews. Toss to coat.
  4. Add the nuts to the slow cooker in an even layer. Cover and cook on high for 1 hour until a light syrup forms at the bottom.
  5. Turn the heat to low, stir the nuts, and continue to cook covered for 1 hour, stirring every 20 minutes, until the nuts are glazed and the bottom of cooker is dry.
  6. Turn off the cooker. Transfer the nuts to a baking sheet lined with aluminum foil. Let the nuts cool and harden, stirring occasionally, up to 2 hours. Serve immediately or store in an airtight container.
