Easy and healthy no-sodium nut snack mix recipe. This is especially good when combined with dried fruit (we used dried cranberries and dried banana chips.)
Slow Cooker Spicy Zesty Nuts
Serves: 16
Ingredients
- ¼ cup pure maple syrup
- 3 Tbsp unsalted butter, melted
- 2 tsp ground cinnamon
- 2 tsp finely grated dried orange zest (OR dried lemon zest)
- ½ tsp Mrs Dash Original Seasoning blend
- ⅛ tsp cayenne pepper
- 2 cups raw pecans
- 2 cups unsalted roasted or raw cashews
Instructions
- If using raw cashews, you will need to roast them first: Preheat the oven to 350degrees. Spread the raw cashews in a single layer on a baking dish. Bake 10 minutes in the pre-heated oven, stirring twice (every 3 minutes or so).
- Line a slow cooker with heavy duty aluminum foil. Lightly oil the foil or spray with cooking spray.
- Whisk together the maple syrup, butter, cinnamon, orange zest, Mrs Dash Original, and cayenne in a large bowl. Add the pecans and roasted cashews. Toss to coat.
- Add the nuts to the slow cooker in an even layer. Cover and cook on high for 1 hour until a light syrup forms at the bottom.
- Turn the heat to low, stir the nuts, and continue to cook covered for 1 hour, stirring every 20 minutes, until the nuts are glazed and the bottom of cooker is dry.
- Turn off the cooker. Transfer the nuts to a baking sheet lined with aluminum foil. Let the nuts cool and harden, stirring occasionally, up to 2 hours. Serve immediately or store in an airtight container.
