Fruit and nut bars made with only enough batter to hold the fruit and nuts together; a great snack.

Fruit and Nut Bars
Serves: 16
Ingredients
- ⅓ cup all purpose flour
- ⅛ tsp baking soda
- ⅛ tsp low-sodium baking powder
- ⅓ cup brown sugar
- 1½ cups chopped nuts (walnuts, pecans,...)
- 3 cups dried fruit, cut into bite sized pieces (for maximum flavor, use a variety of different kinds of dried fruit: raisins, cranberries, apples, apricots, ...)
- 1 large egg
- ½ tsp pure vanilla extract
Instructions
- Preheat oven to 325 degrees F, and place the rack in the center of the oven. Line an 8 x 8 inch square baking pan across the bottom and up the two opposite sides with aluminum foil.
- In a large bowl, whisk together the flour, baking soda, and baking powder. Stir in the brown sugar, walnuts, and dried fruit. Make sure that all the fruit and nuts have been coated with the flour mixture.
- In a separate bowl, whisk the egg and vanilla 3-4 minutes (it will be bubbly and start to thicken a little.)
- Add the egg mixture to the fruit and nut mixture. Mix until all the fruit and nut pieces are coated with the batter. Spread into the prepared pan, pressing to even it out.
- Bake for about 35 to 40 minutes, or until the batter is golden brown and has pulled away from the sides of the pan. Remove from oven and place on a wire rack to cool.
- When totally cooled, lift the bars from the pan by the edges of the aluminum foil.
- Use a sharp knife to cut into 16 squares. Store up to 10 days at room temperature (longer if refrigerated)
