Berry Crisp

This is an easy recipe for fruit crisp dessert. It works well with any fresh or frozen berries.

Berry Crisp
Serves: 8
 
Ingredients
  • 7 cups fresh or frozen fruit, pitted and sliced (4 to 5 cups)
  • 3 Tbsp cornstarch
  • 2 Tbsp granulated sugar
  • ⅔ cup packed brown sugar
  • ½ cup all-purpose or whole wheat flour
  • ½ cup quick-cooking or old-fashioned oats
  • ⅓ cup unsalted butter, melted
  • ½ tsp cinnamon
Instructions
  1. Heat oven to 350 degrees.
  2. In a medium saucepan, mash 2 cups of the berries. Stir in cornstarch and granulated sugar. Cook over medium heat, stirring constantly, until mixture boils. Then boil and stir for 1 minute. Remove from heat and stir in the remaining berries.
  3. Place the berry mixture in an un-greased 8 inch square (2 quart) baking dish or 9-inch pie pan.
  4. In a medium bowl, mix together all remaining ingredients until crumbly. Crumble this topping evenly on top of the fruit mixture.
  5. Bake in pre-heated oven for about 30 minutes, until fruit is bubbly and tender and topping is golden brown.
