It makes one loaf of low sodium, moist, savory bread that contains whole wheat, fruit, and nuts.
- ¾ cups whole wheat bread
- ¾ cups all-purpose flour
- ¾ tsp baking soda
- ½ tsp low-sodium baking powder
- ½ tsp ground nutmeg
- ¼ tsp ground cloves
- ⅓ cup unsalted butter, softened
- ⅓ cup sugar
- 1 egg
- 1¼ cups apple butter
- ½ cup raisins
- ½ cup chopped walnuts or pecans, unsalted
- Preheat oven to 350 degrees F (175 degrees C). Grease a 8x4x2-inch loaf pan.
- Sift whole wheat flour, all-purpose flour, baking soda, baking powder, nutmeg, and cloves together and set aside.
- Beat the butter and sugar in a separate large bowl until smooth. Add the egg and apple butter; continue beating until smooth.
- Mix in the flour mixture, stirring gently only until the flour has been incorporated. (Small lumps are ok.)
- Fold in the raisins and walnuts; stirring gently just enough to evenly combine.
- Pour into prepared loaf pan. Bake in the preheated oven until a toothpick inserted into the center comes out clean, 40 to 50 minutes.
- Cool in the pans for 10 minutes. Then remove the loaf from the pan and cool completely on a wire rack.
