This is a very easy way to roast a tougher cut of beef for a very tender, flavorful roast beef.
Oven Roast Beef, Foil

Ingredients
- 3 lbs bottom round, chuck, or shoulder roast (preferably with a thin layer of fat on one side)
- ⅓ cup Cream of XXX soup mix (see recipe)
- 4-6 oz mushrooms, diced
- 1½ Tbsp dried minced onions
- 1 Tbsp Mrs Dash Steak Grilling Seasoning
- 1 cup water
Instructions
- Let the roast sit at room temperature for about an hour so it will cook evenly.
- Preheat the oven to 300 degrees. Line a 9 x 12 inch roasting pan with enough aluminum foil to completely wrap and seal the roast.
- Combine the dried minced onions with the water and let sit for 3 minutes or more to hydrate the onions.
- In a small sauce pan, stir the onions in water, Cream of XXX soup mix, and Mrs Dash Steak Grilling seasoning until well blended. Stir in the mushrooms. Heat to boiling, then reduce heat and simmer for 1 minute to thicken.
- Spread a paste of the soup mixture on the bottom of the meat. Then place the roast on the foil in the pan, with the fat side up and pour the remaining soup mixture over the roast, spreading some on each side and pouring the remainder on the top of the roast. Fold the foil over the roast and fold the edges to completely seal the package.
- Bake for 3-4 hours until tender.
