This recipe was inspired by the Sloppy Joes recipe we enjoyed many years ago at the Wesley Foundation (United Methodist Student Center) at the University of Tennessee on “Thursday Lunch” days.
For improved flavor and much lower sodium, we use our homemade Chicken Gumbo Soup instead of canned soup
- 1 lb lean ground beef
- ½ cup onion, chopped
- ⅓ cup no-salt ketchup
- 1-1/2 Tbsp yellow mustard
- ½ tsp Mrs. Dash Steak Grilling seasoning
- Mix with 2-1/2 cups home-made chicken gumbo soup (see recipe)
- Saute onion until translucent.
- Add ground beef and cook until beef is browned, breaking the beef into small bits as it cooks. Drain.
- Add remaining ingredients and simmer until desired consistency (10-15 minutes).
Note that sodium percentages depend on which daily reference you use. The estimated 65 mg of sodium per serving implies that one serving of this recipe provides:
– 3% of the U.S. FDA daily reference value for sodium for a 2,000-calorie diet that includes 2,400 mg sodium, or
– 4% of the American Heart Association recommendation of 1,500 mg sodium per day, or
– 6% of the Ménière’s diet recommendation of 1,000 mg sodium per day.
